Ingredients:
  • 6 mandarins
  • 170g (1/2 cup) sweet orange marmalade
  • 185ml (3/4 cup) water
  • 60g (1/4 cup) caster sugar
  • 2 100g containers mango flavoured frozen yoghurt
Instructions:
  • Juice 2 mandarins and peel the rest. Use a serrated knife to slice each mandarin into 4 rounds.
  • In a large non-stick frying pan over medium heat, mix mandarin juice, marmalade, water, and sugar until marmalade and sugar dissolve. Bring to a boil, then simmer uncovered for 6-8 minutes until the syrup slightly thickens. Add mandarin slices, reduce heat to medium-low, and simmer uncovered for 4-5 minutes until warmed through.
  • Distribute mandarin slices into bowls, generously drizzle with syrup, and serve with frozen yogurt.
