Mandarins poached in sweet syrup with a cardamom cream topping.
Ingredients:
  • 500ml (2 cups) water
  • 185ml (3/4 cup) honey
  • 8 green cardamom pods
  • 1 x 7cm cinnamon stick
  • 1 whole star anise
  • 6 mandarins, peeled, white pith removed, quartered, halved crossways
  • 55g (1/3 cup) pistachio kernels, coarsely chopped
  • 1 x 300ml ctn double cream
  • 12.00 gm icing sugar mixture
  • 1/4 tsp ground cardamom
Instructions:
  • Whisk cream, sugar, and cardamom in a bowl until slightly thickened to make the cardamom cream.
  • In a saucepan over low heat, gently mix together water, honey, cardamom, cinnamon, and star anise until the honey is melted, about 1-2 minutes.
  • Turn up the heat to high and let it come to a vigorous boil. Introduce the mandarin and cook for 3-4 minutes until it's tender. Move the mandarin into a heatproof bowl.
  • Simmer the honey mixture until it thickens, about 10 minutes. Divide mandarin slices into bowls, pour syrup over them, and add cardamom cream. Top with pistachios before serving.
