Delightful orange marmalade spread using seasonal oranges - perfect for winter toast!
Ingredients:
  • 1.2 kg oranges, scrubbed, halved lengthways, thinly sliced crossways
  • 2000.00 gm water
  • 1800.00 gm white sugar, approximately
Instructions:
  • In a large glass or ceramic bowl, combine the orange and water. Cover with plastic wrap and let it sit overnight.
  • Pour the mixture into a large saucepan. Heat over medium heat until it boils, then lower the heat and let it simmer for 1 hour or until it reduces by about one-third.
  • Allow the mixture to cool slightly before measuring it and adding an equal amount of sugar. Stir over low heat until the sugar dissolves. Increase the heat to medium-high and bring it to a boil. Cook for 45 minutes, skimming any foam off the surface, until it reaches the setting point.
  • Transfer the mixture into clean, warm sterilized jars. Seal tightly and label accordingly.
