Upgrade your quesadilla game with these irresistibly cheesy delights.
Ingredients:
  • 1 brown onion, chopped
  • 300g pork mince
  • 32.00 gm dark brown sugar
  • 7.50 gm ground cumin
  • 1 tsp ground coriander
  • 2.50 gm smoked paprika
  • 400g can black beans, drained, rinsed
  • 250.00 ml grated tasty cheese
  • 8 flour tortillas
  • 80g baby spinach
  • Fresh coriander sprigs, to serve
  • Lime wedges, to serve
Instructions:
  • In a large frying pan over medium-high heat, heat oil. Add onion and cook, stirring, for 3 minutes until golden. Turn up the heat to high. Stir in mince, sugar, and spices. Season with salt and pepper. Cook for 4 to 5 minutes, breaking up the mince with a wooden spoon until browned. Add beans and combine. Set aside.
  • Heat up your sandwich press.
  • 1. Sprinkle 1 tablespoon of cheese on the hot sandwich press. Layer a tortilla over the cheese. Add one-quarter of the mince mixture, one-quarter of the spinach, and 1 tablespoon of cheese. Top with another tortilla and sprinkle with 1 tablespoon of cheese. Close the sandwich press and cook for 2 1/2 minutes. Transfer to a plate and cover with foil to keep warm. Repeat the process with the remaining cheese, tortillas, mince mixture, and spinach to make a total of 4 quesadillas.
  • Slice the quesadillas into quarters and promptly plate them with fresh cilantro and lime wedges.
