Indulgent brunch: Bacon-crusted French toast filled with cream cheese and fruit mixture - a delightful blend of crunchy, salty, and sweet flavors.
Ingredients:
  • 4 slices bacon
  • 0.5 (8 ounce) package cream cheese, softened
  • 2 tablespoons butter, at room temperature
  • 2 tablespoons white sugar
  • 4 strawberries, diced, or more to taste
  • 0.5 teaspoon lemon juice
  • 4 slices bread
  • 3 eggs
  • 0.5 cup coconut milk
  • 0.5 teaspoon vanilla extract
  • 1 dash ground nutmeg
  • 1 dash salt
  • 2 tablespoons butter
  • 1 sprig mint leaves, slivered
Instructions:
  • In a large skillet over medium-high heat, crisp up the bacon slices, flipping occasionally, for about 10 minutes until they are beautifully browned. Transfer the bacon slices to paper towels to drain and dice them. Save the flavorful bacon grease for later use.
  • Combine cream cheese, luxurious butter, and sweet sugar in a separate bowl. Gently fold in fresh strawberries and zesty lemon juice until well combined.
  • Spread the filling evenly on 2 slices of bread and top with the remaining 2 slices. Gently press the sandwiches together.
  • In a shallow bowl, whisk together eggs, coconut milk, vanilla extract, ground nutmeg, and salt to create a flavorful egg wash.
  • In a nonstick skillet over medium heat, melt 1 1/2 teaspoon of reserved bacon grease with 1 1/2 teaspoon of butter. Spread half of the diced bacon evenly in the skillet. Dip one side of each sandwich in the egg wash and place on top of the bacon in the skillet. Cook until the eggs are set and slightly browned, around 2 minutes. Transfer to a plate.
  • Melt the rest of the bacon grease and butter in the skillet. Add the remaining diced bacon. Dip the other side of the sandwiches in egg wash and cook in the skillet until lightly browned, about 2 to 3 minutes.
  • Halve the sandwiches and sprinkle with fresh mint for a delightful touch.
