Indulge in a comforting polenta-crusted bacon and potato pie.
Ingredients:
  • Melted butter or margarine, for greasing
  • 40g (1/4 cup) polenta (cornmeal)
  • 1.5kg (about 6 medium) Desiree potatoes, peeled, cut into large pieces
  • 40g (2 tbsp) butter
  • 6 bacon rashers, rind removed, chopped
  • 125g Gruyere cheese, grated
  • 1 bunch fresh chives, chipped
  • 125.00 ml shredded fresh basil
  • Ground black pepper, to taste
Instructions:
  • Preheat your oven to 180 degrees C. Grease an 8.5 x 26cm loaf pan generously with melted butter or margarine. Dust the pan with 2 tablespoons of polenta, ensuring an even coating, then shake out any excess.
  • Boil the potatoes in a generously salted large saucepan for roughly 20 minutes or until they are tender. After draining, blend in the butter and mash until smooth using a potato masher. (refer to microwave tip 1).
  • Crisp the bacon in a non-stick pan over high heat, then drain on paper towel.
  • Combine bacon, cheese, chives, and basil with mashed potatoes. Season with pepper. Transfer mixture into loaf pan, pressing down firmly. Sprinkle the top with remaining polenta. Bake in preheated oven for 60-65 minutes until golden and set. Let cool in pan for 15 minutes before slicing and serving warm.
