Savor a hearty meal of juicy sausages, creamy mashed potatoes, and flavorful herb-infused vegetables.
Ingredients:
  • 800g sweet potatoes (kumara), peeled, coarsely chopped
  • 60ml (1/4 cup) milk
  • 20g butter
  • 3 rindless bacon rashers
  • 12 beef chipolata sausages
  • 150g button mushrooms
  • 120g cherry tomatoes
  • 62.50 ml fresh sage leaves
  • 40.00 ml balsamic vinegar
Instructions:
  • Boil the sweet potato in a large saucepan until tender, about 10 minutes. Drain and return to the pan. Mash until smooth using a potato masher. Mix in the milk and butter. Season with salt and pepper to taste.
  • Cut each bacon rasher into four 2cm-wide strips. Wrap one strip of bacon around each sausage and secure with a toothpick. Preheat the grill on high. Place the sausages on a large baking tray and grill, turning occasionally, for 10 minutes until golden and cooked through.
  • As the sausages sizzle, heat oil in a large non-stick pan over high heat. Toss in mushrooms and sauté for 2 minutes until tender. Introduce tomatoes and sage, stir for 2 more minutes until tomatoes just soften. Pour in vinegar and simmer for 1 minute until veggies are tender and sauce thickens slightly. Season with salt and pepper. Plate up by spooning mash and tomato medley onto dishes, finishing with a crown of sausages on top. Enjoy!
