Indulge in a delightful pumpkin bread infused with warm cinnamon and fragrant vanilla – a true delight.
Ingredients:
  • 1/2 cup butter (do not use margarine)
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 can (15 oz) pumpkin (not pumpkin pie mix)
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
Instructions:
  • Preheat oven to 350°F. Grease 8x4-inch loaf pan generously with shortening or cooking spray. In a 1-quart saucepan, melt butter over medium heat, stirring constantly, until it turns light golden brown. Allow it to cool completely.
  • Combine browned butter, sugar, vanilla, pumpkin, and eggs in a medium bowl, whisking until well blended. In a separate large bowl, mix flour, baking soda, salt, cinnamon, and cloves. Gently fold in the pumpkin mixture until just combined. Transfer the batter into the pan.
  • Bake for 60 to 65 minutes until a toothpick inserted in the center comes out clean. Let it cool for 15 minutes, then gently remove the loaf from the pan onto a cooling rack. Allow it to cool completely for about 1 hour and 30 minutes before slicing. Store tightly wrapped at room temperature for up to 4 days or in the refrigerator.
