Whip up a delectable carrot side dish in just 45 minutes!
Ingredients:
  • 3 lb carrots
  • 1/3 cup butter
  • 1 teaspoon salt
  • 1 teaspoon freshly ground pepper
  • 1/2 cup water
  • 1/3 cup packed brown sugar
  • 1/3 cup cider vinegar
  • 2 teaspoons vanilla
  • Fresh thyme leaves or chopped fresh Italian (flat-leaf) parsley, if desired
Instructions:
  • Slice carrots in half lengthwise, then into 2-inch pieces (cut thick pieces in half lengthwise). In a skillet, melt butter over medium heat until it turns a golden brown color. Add carrots, salt, and pepper. Cook for 8 to 10 minutes, stirring occasionally, until carrots are tender.
  • Begin by gently pouring the water into the skillet, then cover and allow it to cook for 10 minutes. Stir in the brown sugar and vinegar, and cook uncovered for 8 to 10 minutes until the carrots are glazed and the liquid has mostly evaporated. Take the skillet off the heat, stir in the vanilla, and finish by garnishing with thyme.
