Plum streusel muffins: Sweet plums, rich browned-butter topping - ideal for breakfast or snack.
Ingredients:
  • 1/2 cup butter (do not use margarine)
  • 2 large plums, coarsely chopped (2 cups)
  • 1/4 teaspoon ground cardamom
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 3/4 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/3 cup milk
  • 1 teaspoon vanilla
  • 1/2 cup packed brown sugar
  • 1/2 cup chopped walnuts, toasted
  • 1/4 cup butter or margarine, softened
  • 1/3 cup Gold Medal™ all-purpose flour
Instructions:
  • Preheat your oven to 350°F and line a 12-cup muffin tin with paper baking cups.
  • In a small saucepan, melt 1/2 cup of butter over medium heat, stirring constantly until it turns a light golden brown. Take it off the heat, then mix in the plums and cardamom. Let it cool completely.
  • Combine 1 1/2 cups of flour, granulated sugar, baking powder, and salt in a large bowl. Add milk, vanilla, and eggs, and mix until just moistened. Fold in the plum mixture, then distribute the batter evenly into muffin cups.
  • Combine brown sugar, walnuts, and 1/4 cup of butter in a small bowl. Use a fork to mix in 1/3 cup of flour until crumbly. Sprinkle the topping evenly over the batter.
  • Bake for 25 to 30 minutes until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes before removing from the pan to a cooling rack. Enjoy warm or at room temperature.
