Indulge in the cozy delight of pumpkin pie with luscious butter frosting for a perfect autumn treat.
Ingredients:
  • 2 cups Gold Medal™ all-purpose flour
  • 1 1/2 cups granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons pumpkin pie spice
  • 2 teaspoons grated orange peel
  • 1/4 teaspoon salt
  • 1/2 cup vegetable oil
  • 1/2 cup orange juice
  • 1 cup canned pumpkin (not pumpkin pie mix)
  • 2 eggs
  • 1/3 cup butter (do not use margarine)
  • 2 cups powdered sugar
  • 1/2 teaspoon vanilla
  • 2 to 4 tablespoons milk
Instructions:
  • Preheat oven to 350°F. Grease and flour a 15x10x1-inch pan with shortening or baking spray with flour.
  • Using a large bowl, combine bar ingredients and mix with an electric mixer on low speed, making sure to scrape the bowl occasionally, until moistened. Increase the speed to medium and beat for 2 minutes, making sure to scrape the bowl occasionally. Spread the batter evenly in the pan.
  • Bake for 23 to 27 minutes or until a toothpick inserted in the center comes out clean. Allow it to cool completely, for about 1 hour.
  • 1. Melt butter in a 2-quart saucepan over medium heat until light golden brown. Remove from heat, then mix in powdered sugar, vanilla, and enough milk to reach a smooth, spreadable consistency. Spread frosting over cooled bars right away and chill for about 15 minutes until firm. Cut into 8 rows by 6 rows to make bars. Add an orange peel strip on top of each bar for extra flair, if desired.
