Fall-inspired pumpkin waffles topped with apple-cranberry relish, maple syrup, and pecans make a delightful seasonal breakfast.
Ingredients:
  • 3 large Granny Smith apples
  • 3 tablespoons butter
  • 0.5 teaspoon ground cinnamon
  • 0.25 cup orange juice
  • 1 teaspoon grated orange zest
  • 0.75 cup maple syrup, divided
  • 0.5 cup dried cranberries
  • 0.5 cup chopped pecans
  • 2 tablespoons butter
  • 3 eggs
  • 1.5 cups low-fat buttermilk
  • 0.5 cup canola oil
  • 0.5 cup pumpkin puree
  • 1.5 cups whole wheat pastry flour
  • 2 tablespoons white sugar
  • 2 teaspoons baking powder
  • 0.75 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground cloves
  • 0.5 cup butter, for serving
Instructions:
  • For the Apple-Cranberry Relish: Peel, core, and dice the apples into 1/4-inch pieces. In a saucepan, mix the diced apples with 3 tablespoons of butter, 1/2 teaspoon of cinnamon, a dash of vanilla, orange juice, and 1/2 cup of maple syrup. Cook over medium heat for approximately 3 minutes. Next, add the cranberries and simmer for 5-10 minutes until apples are tender and cranberries have softened.
  • Use a slotted spoon to lift out the apples and cranberries, transferring them to a bowl. Boil the apple syrup until it thickens, for about 8 minutes, while stirring often. Take it off the heat and mix in the remaining 1/4 cup of maple syrup. Combine the pecans and orange zest (if using) with the apple-cranberry mix.
  • Preheat waffle iron following the manufacturer's guidelines.
  • In a bowl, thoroughly beat together eggs, buttermilk, canola oil, and pumpkin puree. In another bowl, combine pastry flour, sugar, baking powder, baking soda, cinnamon, nutmeg, cloves, and ginger. Slowly stir the dry ingredients into the pumpkin mixture until well combined. Adjust consistency by adding a tablespoon of buttermilk if needed until the batter is pourable.
  • Prepare the waffles as directed on the package. Serve them hot, with a dollop of butter and apple-cranberry relish on top, and spiced apple syrup on the side.
