Ingredients:
  • 2 cups maple syrup
  • 0.5 tablespoon ground ginger
  • 0.25 teaspoon freshly grated nutmeg
  • 2 cups milk
  • 1 (15 ounce) can pumpkin puree
  • 4 eggs, separated
  • 2 cups all-purpose flour
  • 0.5 cup flaxseed meal
  • 4 teaspoons baking soda
  • 0.5 teaspoon salt
  • 1 stick butter, melted
  • 0.25 cup brown sugar
Instructions:
  • In a pitcher, mix together the rich maple syrup, fragrant ginger, and warm nutmeg, setting the syrup aside for later.
  • In a large bowl, whisk together milk, pumpkin puree, egg yolks, and vanilla extract. In a separate bowl, mix flour, flaxseed meal, baking soda, and salt. Combine the wet and dry ingredients, then stir in the butter.
  • Whisk egg whites in a spotless, empty bowl until frothy. Gradually incorporate brown sugar, 2 tablespoons at a time, and mix until soft peaks form. Gently incorporate egg whites into waffle batter in 3 parts.
  • Preheat your waffle iron following the manufacturer's guidance. Cook the waffle until it turns golden brown and the steam stops, around 5 minutes.
