Delicious pumpkin waffles infused with warm cinnamon and nutmeg, topped with maple syrup and applesauce for a cozy fall breakfast.
Ingredients:
  • 1 cup all-purpose flour
  • 1/4 cup yellow cornmeal, finely ground
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • Pinch ground nutmeg
  • Pinch of ground cloves
  • 2 large eggs
  • 2 tablespoons brown sugar (packed)
  • 1 1/4 cup buttermilk
  • 1/2 cup fresh or canned pumpkin purée
  • 4 tablespoons butter, melted (plus a little more for brushing the waffle iron)
  • Applesauce or apple butter for serving
Instructions:
  • Heat up the waffle iron to ensure it's ready for the batter.
  • Combine flour, cornmeal, baking powder, baking soda, salt, and spices in a medium bowl, whisking vigorously until fully mixed.
  • Combine sugar and wet ingredients: In a large bowl, thoroughly whisk together eggs and brown sugar until smooth. Mix in buttermilk, pumpkin purée, and melted butter until well combined.
  • Combine the dry ingredients with the wet ingredients, whisk until smooth.
  • Prepare the waffle iron: Brush melted butter onto the hot wells for easy removal. Ladle batter onto the center, avoiding the edges. Close the lid and cook for 4-5 minutes. Remove waffles with a fork. Serve with warm maple syrup and apple sauce or apple butter.
