Indulge in a homemade pumpkin-spiced butter - a delicious topping for waffles and biscuits.
Ingredients:
  • 3 cups canned pumpkin (not pumpkin pie mix)
  • 1 1/2 cups packed brown sugar
  • 1/2 cup granulated sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/8 teaspoon salt
Instructions:
  • In a 4-quart saucepan, combine pumpkin, brown sugar, granulated sugar, and lemon juice. Heat over medium-low heat until simmering, stirring occasionally to prevent sticking. Simmer uncovered for 30 minutes, stirring frequently until the mixture coats the back of a spoon. Remove from heat and mix in vanilla, cinnamon, allspice, and salt. Let it cool completely.
  • Transfer the mixture into airtight containers and refrigerate.
