Tasty and moist pumpkin butter cookies perfect for fall festivities.
Ingredients:
  • 1 cup packed light brown sugar
  • 0.25 cup butter, softened
  • 0.5 cup quick cooking oats
  • 0.5 cup pumpkin butter
  • 1 cup all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon pumpkin pie spice
  • 0.5 teaspoon ground cinnamon
  • 2 tablespoons milk
  • 0.5 cup chopped pecans
  • 0.5 cup raisins
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly grease 2 baking sheets.
  • In a mixing bowl, blend together brown sugar and butter until creamy. Then mix in oats, pumpkin butter, and egg until well combined.
  • In a separate bowl, whisk together flour, baking soda, baking powder, salt, pumpkin pie spice, and cinnamon. Gradually add this mixture to the sugar mixture, alternating with milk, until well blended. Fold in pecans and raisins.
  • Spoon small dollops of cookie dough onto the lined baking sheets.
  • Place the cookie dough in the preheated oven and bake until they are firm and have a beautiful golden hue, approximately 15 minutes. Then, move the cookies onto wire racks to cool completely.
