Spicy pumpkin muffins with molasses, whole wheat flour, flax, yogurt, and applesauce - ideal for cozy fall gatherings.
Ingredients:
  • 1 cup all-purpose flour
  • 0.5 cup whole wheat flour
  • 0.25 cup flax seed meal
  • 0.25 cup rolled oats, plus extra for garnish
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 0.5 teaspoon ground cloves
  • 0.25 teaspoon ground nutmeg
  • 0.5 cup dark brown sugar
  • 1 cup pumpkin puree
  • 0.5 cup nonfat plain yogurt
  • 2 eggs
  • 3 tablespoons molasses
  • 3 tablespoons unsweetened applesauce
  • 1 tablespoon canola oil
  • 1 teaspoon vanilla extract
  • 0.5 cup golden raisins
  • 0.5 cup chopped walnuts
  • 2 tablespoons pumpkin seeds for garnish
Instructions:
  • - Preheat your oven to a toasty 400°F (200°C) while giving your 12 muffin cups a quick spritz of cooking spray.
  • Combine 2 types of flour, flax seed meal, rolled oats, baking powder, baking soda, salt, cinnamon, ginger, cloves, and nutmeg in a bowl, ensuring all ingredients are well mixed.
  • In a separate large bowl, whisk together brown sugar, pumpkin puree, yogurt, eggs, molasses, applesauce, canola oil, and vanilla until fully blended. Add the flour mixture and stir until just combined, then gently fold in the raisins and walnuts.
  • Spoon the batter into the muffin tins, top each with a sprinkle of rolled oats and pumpkin seeds, then bake in the preheated oven until the tops are springy to the touch and a toothpick inserted into the center comes out clean, about 15 to 20 minutes.
