Festive fall cookies with molasses, cinnamon, and pumpkin spice, perfect for holiday gatherings.
Ingredients:
  • 0.75 cup butter-flavored shortening
  • 0.25 cup brown sugar
  • 0.75 cup white sugar, divided
  • 0.25 cup molasses
  • 1 large egg, beaten
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1.5 teaspoons pumpkin pie spice
  • 0.5 teaspoon ground cinnamon
  • 1 tablespoon unsalted butter
Instructions:
  • Gently melt shortening in a small saucepan over low heat. Allow to cool at room temperature for 5 to 10 minutes.
  • Incorporate cooled shortening with brown sugar, 1/2 cup white sugar, molasses, and egg until thoroughly combined.
  • In a separate bowl, thoroughly combine flour, baking soda, pumpkin pie spice, cinnamon, and salt. Add the dry mixture to the wet ingredients and gently mix by hand until just combined, resembling kneading. The dough will be crumbly; do not incorporate any additional liquids. Chill in the refrigerator for 30 minutes before proceeding.
  • Preheat the oven to a toasty 375 degrees F (190 degrees C), while generously buttering 2 baking sheets. Sprinkle the leftover 1/4 cup of sugar in a cute little shallow bowl.
  • Take approximately 1 tablespoon of chilled dough and shape it into a ball. Gently roll the balls in sugar to coat, then place them on the prepared baking sheets.
  • Bake in the preheated oven for about 9 minutes or until edges are golden. Let cool briefly on the baking sheet before transferring to a wire rack to cool completely.
