Spiralized apple and potato latkes drizzled with maple syrup - a sweet twist on a classic side dish!
Ingredients:
  • 1 russet potato, peeled
  • 1 firm apple, peeled
  • 1 egg, lightly beaten
  • 3 tablespoons all-purpose flour
  • 1 teaspoon maple syrup
  • 0.5 teaspoon sea salt
  • 1 pinch ground nutmeg
  • 2 tablespoons vegetable oil, or as needed
Instructions:
  • Cut deep vertical lines on both sides of the potato and apple.
  • Spiralize potato and apple using the small shredded blade. Place the shredded potato and apple on layers of paper towels and press to remove excess moisture. Transfer to a bowl.
  • Combine the egg, flour, maple syrup, salt, and nutmeg in a bowl.
  • In a skillet over medium heat, warm vegetable oil. Drop 2 tablespoons of the potato mixture onto the skillet, gently press with a spatula, and cook until both sides are golden brown, about 3 to 4 minutes each. Transfer to a paper towel-lined plate to drain. Repeat the process with the rest of the mixture, adding more oil as necessary.
