Crumbed pork steaks with apple mash

Succulent breaded pork with comforting apple-potato mash for a simple weeknight dinner.
Ingredients:
  • 20.00 gm basil pesto
  • 50g butter, softened
  • 700g sebago potatoes, peeled, roughly chopped
  • 300g Granny Smith apples, peeled, cored, roughly chopped
  • 84.98 gm milk
  • 82.50 ml plain flour
  • 375.00 ml panko breadcrumbs
  • 8 (500g total) pork sizzle steaks
  • 75.08 gm extra virgin olive oil
  • 300g green beans, trimmed
  • Zest of 1 lemon
Instructions:
  • Mix the pesto and butter together in a small bowl, then set aside for later use.
  • In a large saucepan, combine the potato and apple, cover with cold water, and bring to a boil over high heat. Reduce the heat to medium-high and cook for 15 minutes until tender. Drain well, then return to the pan and mash until smooth. Stir in the milk and season with salt and pepper, mixing well. Keep warm by covering.
  • Lay out the flour on a plate. Combine the egg with 1 tablespoon of water in a shallow bowl. Spread out the breadcrumbs on another plate. Take one steak at a time, coat it in flour, ensuring to shake off any excess. Dip it in the egg mixture and then coat it in breadcrumbs, pressing gently to make sure it sticks. Transfer the coated steak to a plate.
  • In a large frying pan over medium-high heat, sear steaks for 2 minutes on each side until golden and cooked to your liking. Then, transfer the steaks to a paper towel to drain.
  • Boil beans in water for 1 minute until vibrant green and tender. Drain, then mix with lemon zest and season. Serve alongside steak, mashed potatoes, and pesto butter for a delightful meal.
