Crumbed pork chop with cheesy vegetables

Family-friendly meal featuring crispy pork chops and cheesy veggies.
Ingredients:
  • 75g breadcrumbs
  • 25g parmesan
  • 62.50 ml flat-leaf parsley, finely chopped
  • 35g plain flour
  • 1 Free Range Egg
  • 4 Pork Loin Chops
  • 2 x 150g pkts Broccoli & Cauliflower Florets
  • 1 carrot, thinly sliced
  • 120g pea
  • 490g jar three-cheese pasta bake sauce
  • 60g cheddar cheese
  • Olive oil, to shallow-fry
  • Lemon wedges, to serve
Instructions:
  • Preheat the oven to 180C. Mix breadcrumbs, parmesan, and parsley in a shallow bowl. Season the flour on a plate. Whisk the egg in another shallow bowl. Coat the pork in flour, then dip in the egg, and coat with the breadcrumb mixture. Chill in the fridge for 20 minutes wrapped in plastic wrap before baking.
  • Mix together the broccoli, carrot, and peas in an ovenproof dish. Top with the sauce and sprinkle with cheese. Bake for 25-30 mins until vegetables are tender and cheese is golden brown.
  • Heat oil in a large frying pan over medium heat. Cook pork for 3-4 minutes on each side until golden brown and cooked to your preference. Transfer to a paper towel-lined plate. Let rest covered for 5 minutes before serving.
  • Present the pork alongside the seasoned vegetables and fresh lemon wedges.
