Sticky rum-roasted apple & sweet potato

Sweet potato and apple bites glazed with rum and sugar, bursting with flavor.
Ingredients:
  • 800g sweet potato (kumara), cut into 2cm rounds
  • 1 red onion, peeled, cut into wedges
  • 1 Pink Lady apple, cut into 8 wedges
  • 55g (1/4 cup, firmly packed) brown sugar
  • 1 cinnamon stick
  • 40.00 ml dark rum
  • Fried sage leaves, to serve
Instructions:
  • Preheat your oven to 190°C. Toss sweet potato, onion, apple, sugar, cinnamon, rum, and oil together on a baking tray, then season with your favorite spices.
  • Roast for 45 minutes, stirring once, until tender, and top with sage.
