Melon salad with ginger rum syrup

Elevate classic fruit salad with a rum-infused sticky sweet syrup.
Ingredients:
  • 1kg seedless watermelon, peeled
  • 750g honeydew melon, peeled
  • 750g rockmelon, peeled
  • 50g chopped glace ginger
  • 40.00 gm caster sugar
  • 40.00 ml white rum
  • 40.00 gm water
  • 300g Greek Style Yoghurt
Instructions:
  • Scoop balls from the watermelon, honeydew melon, and cantaloupe using a melon baller, then place them in a bowl.
  • Combine ginger, sugar, rum, and water in a small saucepan. Stir over medium-low heat until sugar dissolves. Bring to a boil, then reduce heat and simmer until syrup thickens, about 10 minutes. Let cool for 5 minutes before using.
  • Drizzle the fragrant ginger syrup over the refreshing melon mix and let it steep for 5 minutes. Enjoy with a dollop of creamy yogurt on the side.
