Papaya & melon salad with coconut dressing

Ingredients:
  • 1 x 140ml can coconut milk
  • 4.40 gm vanilla essence
  • 500g rockmelon
  • 500g honeydew melon
  • 350g papaya
Instructions:
  • In a small saucepan, combine coconut milk, sugar, and vanilla essence. Cook over low heat, stirring occasionally, until the sugar dissolves. Increase the heat to medium-high and bring the mixture to a simmer. Let it simmer uncovered for 2-3 minutes until the sauce slightly reduces and turns a light caramel color. Allow it to cool for 5 minutes before using.
  • Peel and seed the rockmelon, honeydew melon, and papaya. Cut them into cubes, then combine in a large bowl. Transfer the fruit to serving bowls and drizzle with coconut sauce before serving immediately.
