Delicious and refreshing papaya, tomato, and red pepper salad in a flavorful papaya seed dressing. Perfect for a light and healthy appetizer before a hearty meal. Enjoy with fresh baguette, crackers, or tortilla chips.
Ingredients:
  • 1 small papaya
  • 5 medium Roma (plum) tomatoes, diced
  • 0.5 medium red onion, diced
  • 1 medium red bell pepper, seeded and diced
  • 0.25 cup chopped fresh basil leaves
  • 2 tablespoons white sugar
  • 0.25 cup red wine vinegar
  • 0.25 cup vegetable oil
  • 0.5 teaspoon mustard powder
  • 2 stalks green onions, chopped
  • 1 (16 inch) French baguette, cut into 1/2 inch pieces
Instructions:
  • Halve the papaya and scoop out the seeds, saving 2 tablespoons for the dressing. Peel and chop the papaya, and place it in a bowl. Mix in tomatoes, red onion, red pepper, and basil, then set aside.
  • Combine papaya seeds, sugar, wine vinegar, oil, mustard, and green onions in a food processor or blender. Blend until smooth and thick, breaking up most of the seeds. Pour the mixture over the papaya and stir to coat. Serve with baguette slices.
