Buttery papaya bread with a tropical twist, tangy guava juice, and buttermilk for a perfect texture.
Ingredients:
  • 0.5 cup guava juice
  • 2 large ripe papayas
  • 2.5 cups all-purpose flour
  • 2 tablespoons poppy seeds
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1.25 cups white sugar
  • 0.5 cup unsalted butter, softened
  • 2 large eggs
  • 0.5 cup buttermilk
  • 1 tablespoon vanilla extract
Instructions:
  • Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • Cut papayas in half lengthwise, remove and discard seeds, then peel and discard skin. Place flesh in a bowl, mash it, and transfer to a strainer to drain for 10 minutes.
  • In a bowl, mix flour, poppy seeds, baking soda, and salt. In a separate bowl, cream together sugar and butter. Blend in eggs one at a time. Add papaya, buttermilk, guava juice, and vanilla. Gently fold in the dry ingredients until just combined. Transfer the batter to the loaf pan.
  • Bake in the preheated oven for 1 hour 15 minutes or until a toothpick comes out clean. Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack. Let it cool completely for about 30 minutes before slicing.
