Air fryer tropical French toast recipe

Tropical fruit French toast in the air fryer.
Ingredients:
  • 1 papaya
  • 2 bananas
  • 60ml (1/4 cup) almond milk
  • 1.25 gm ground cinnamon
  • 4 eggs, lightly whisked
  • 8 sourdough bread slices
  • 250g (1 cup) natural yoghurt
  • Fresh mint leaves, to serve
Instructions:
  • Prepare the papaya by trimming both ends and using a vegetable peeler to remove the skin. Cut it in half lengthways and scoop out the seeds. Coarsely chop one half and place it in a blender, setting the remaining half aside.
  • Combine ripe banana, creamy almond milk, and fragrant cinnamon in the blender and blend until velvety smooth.
  • - Combine eggs and 125ml (1/2 cup) papaya mixture in a bowl, stirring until smooth. - Dip 2 bread slices in the mixture, shaking off any excess. - Spray air fryer basket with oil, then place bread in the basket. - Air fry at 200C for 5 minutes. - Repeat with the rest of the bread slices and egg mixture.
  • As you wait, combine the yoghurt and 125ml (1/2 cup) of papaya in a bowl, stirring until mixed. Cut the other half of the papaya lengthwise: one half into slices and finely chop the other half.
  • To assemble, layer French toast with yogurt and papaya mixtures, and sliced/chopped papaya. Repeat for each serving. Garnish with mint leaves before serving.
