Air-fried chicken tenders with crispy cornflake-coconut coating. Ready in just 30 minutes for a lighter, tropical twist on classic fried chicken.
Ingredients:
  • 2 pounds chicken tenderloins, tendons removed
  • 0.5 cup tapioca starch
  • 1.5 teaspoons jerk seasoning
  • 0.5 teaspoon granulated garlic
  • 1 egg
  • 1 teaspoon hot sauce
  • 1 cup cornflakes, finely crushed
  • 0.25 cup unsweetened coconut flakes
Instructions:
  • Preheat the air fryer to 400°F (200°C) for 5 minutes until it's nice and hot.
  • First, mix tapioca starch, jerk seasoning, and garlic in a shallow bowl to create the flavorful dry mix. Next, whisk together an egg and hot sauce in a separate shallow bowl to prepare the zesty egg wash. Lastly, combine corn flakes and coconut flakes in a third shallow bowl to assemble the crispy crust.
  • Coat each chicken tender in the dry mix, tap off any extra seasoning. Dip it in the egg wash, let the excess drip off, then coat it in the crust mixture. Repeat for all tenders.
  • Place the crusted chicken tenders in the air fryer basket. Cook on high for 6 minutes. Flip the tenders and cook for another 6 minutes until chicken is fully cooked and coating is crispy.
