Fresh and vibrant papaya shines in this delectable pawpaw loaf.
Ingredients:
  • 125g butter, softened
  • 135.00 gm firmly packed brown sugar
  • 1 tsp finely grated lime rind
  • 300.00 gm self-raising flour, sifted
  • 250.00 ml mashed pawpaw (see note)
  • 125.00 ml macadamia nuts, roughly chopped
  • Butter, to serve
Instructions:
  • Preheat your oven to 170°C/150°C fan-forced. Grease a 6cm-deep, 11cm x 21cm loaf pan and line the base and sides with baking paper, leaving a 2cm overhang at the long ends.
  • With an electric mixer, whip together butter, sugar, and lime zest until airy. Gradually add in eggs one at a time, ensuring thorough mixing after each addition (the mixture might separate). Gently fold in half of the flour, followed by the pawpaw. Mix gently. Add nuts and the rest of the flour, folding until just combined. Transfer the batter into the prepared pan and even out the surface.
  • Bake until skewer comes out clean, then let cool in pan for 10 minutes before transferring to a wire rack. Serve warm with butter.
