Pawpaw parfait

Try using tropical pawpaws in banana bread or a refreshing coconut dessert for a delicious tropical twist.
Ingredients:
  • 270ml can coconut cream
  • 1 pawpaw, peeled, seeded, coarsely chopped
  • 300ml ctn pouring cream
  • 32.00 gm brown sugar
  • 120g pkt sesame snaps, coarsely chopped
Instructions:
  • Chill the coconut cream in the fridge overnight.
  • Pulse the pawpaw in a food processor until a coarse puree forms.
  • Using an electric beater, whip the coconut cream in a large bowl until soft peaks form. Then whip the pouring cream in a separate bowl until soft peaks form. Gently fold the whipped cream into the coconut cream until fully combined, then fold in the sugar.
  • Layer half of the pawpaw slices among six 185ml (3/4-cup) serving glasses. Add half of the coconut cream mixture on top. Repeat with the remaining pawpaw slices and coconut cream mixture. Finish by sprinkling sesame snaps over the top.
