Pawpaw & banana with sweet orange syrup

Ingredients:
  • 250ml (1 cup) fresh orange juice (about 3 oranges)
  • 110g (1/2 cup) caster sugar
  • 1 large (about 1kg) pawpaw
  • 2 bananas
Instructions:
  • In a small saucepan, combine orange juice and sugar. Stir together over high heat until sugar completely dissolves. Let it come to a boil without stirring. Reduce heat to medium-low and simmer uncovered for 15 minutes until the syrup slightly thickens. Set aside off heat for 10 minutes to cool. (Refer to microwave option if desired.)
  • Prepare the pawpaw by halving, peeling, and deseeding. Cut into 1cm thick wedges after quartering lengthways. Slice the bananas diagonally. Arrange the fruit in bowls, drizzle with the orange syrup, and serve.
