Ingredients:
  • 65g (1 cup) shredded coconut
  • 1/2 pawpaw, deseeded, peeled, chopped
  • 2 ripe bananas, chopped
  • 8 scoops vanilla ice-cream
Instructions:
  • In a large non-stick frying pan, toast coconut over medium-high heat, stirring, until golden brown, about 1 minute (refer to microwave tip). Transfer to a plate and let it cool for 10 minutes before using.
  • Divide the pawpaw and banana slices into serving bowls. Roll the ice-cream scoops in coconut and add two scoops to each bowl.
