Papaya, pineapple and strawberry with lime syrup

Ingredients:
  • 220g caster sugar
  • 80ml lime juice
  • finely grated rind of 2 limes
  • 1 papaya, peeled, seeded, quartered
  • 250g punnet strawberries, halved
  • 1 small pineapple, sliced and peeled into rounds
  • vanilla-flavoured yoghurt, to serve
Instructions:
  • In a medium saucepan, combine sugar, lime juice, and 1 1/4 cups (310ml) water. Stir over medium-low heat until the sugar dissolves. Increase heat to medium-high and cook for 8 minutes until the syrup slightly thickens. Stir in the lime rind and remove from heat. Chill until cold.
  • Combine the fresh fruit with the chilled syrup, then let it sit for 20 minutes to enhance the flavors. Serve alongside a dollop of yogurt.
