Create a vibrant summer fruit salad with the freshest seasonal produce.
Ingredients:
  • 2 limes, juiced
  • 161.25 gm caster sugar
  • 1 vanilla bean, split lengthways
  • 2 mangoes, peeled, cut into thin wedges
  • 1/2 papaya, peeled, cut into thin wedges
  • 1/2 small pineapple, peeled, cut into thin pieces
  • 125.00 ml mint leaves
Instructions:
  • In a saucepan over medium heat, mix together sugar, 3/4 cup cold water, 1/4 cup lime juice, and a vanilla bean. Bring to a boil, then lower the heat and let it simmer uncovered for 4 minutes until the syrup thickens. Take it off the heat, refrigerate for 30 minutes until cold, and then remove the vanilla bean before using.
  • Place the fruit and mint on a beautiful serving dish, then generously drizzle the syrup over them.
  • For best results, chill in the refrigerator for 1 hour before serving. Enjoy!
