Spice up your Thai night with a simple and exotic dessert featuring sweet tropical fruits enhanced by chili and salt.
Ingredients:
  • 1 tsp lime rind, finely grated
  • 24.00 gm sea salt
  • Large pinch of chilli powder
  • 1.25 gm caster sugar
  • 1/2 pineapple, peeled, cut into long wedges
  • 1/4 small watermelon, sliced crossways
  • 2 mangoes, thickly sliced
  • 1 pomelo, peeled, chopped
  • 1/2 papaya, peeled, chopped
  • Fresh mint sprigs, to serve
Instructions:
  • Mix together the lime zest, salt, chili powder, and sugar in a small bowl.
  • Create a vibrant fruit platter by artfully arranging pineapple, watermelon, mango, pomelo, and papaya on a plate. Garnish with lime and chili salt, and top with fresh mint sprigs before serving.
