Sambal nenas (pineapple relish)

Revitalize meals with zesty relish. For a rustic touch, use a pestle and mortar if no food processor available.
Ingredients:
  • 2 shallots
  • 1 clove of garlic
  • 1 small ripe pineapple
  • 3 fresh red chillies
  • 2 fresh bird's-eye chillies
  • 2 tablespoons brown sugar
  • 1 lime
Instructions:
  • Prepare the pineapple by trimming, peeling, cutting out any tough parts, and chopping it into wedges, discarding the core. Peel the garlic and shallots, deseed the chilies, then blend in a food processor until finely chopped. Add the pineapple and pulse until finely chopped with some texture remaining. Mix in the sugar and pulse briefly, then add lime juice and mix. Season with sea salt and black pepper to taste, then serve.
