Fresh coconut sambal

Cooling sambal to pair with spicy curries.
Ingredients:
  • 100g coconut
  • 180g yoghurt
  • 62.50 ml finely chopped coriander
  • 1 long green chilli, seeded, finely chopped
  • 1.20 gm salt
  • 20g (1 tbsp) ghee
  • 1 tsp black mustard seeds
Instructions:
  • In a medium bowl, mix together shredded coconut, tangy yoghurt, fresh coriander, spicy chilli, and a pinch of salt.
  • Heat ghee in a small frying pan until sizzling. Add mustard seeds and cook until they start to pop, about 1-2 minutes. Allow to cool for 2 minutes, then mix into the coconut mixture. Chill in the fridge to enhance flavors.
