Delicious vegetarian cabbage curry with fresh coconut, veggies, and Indian spices in coconut milk.
Ingredients:
  • 1 small yellow onion, thinly sliced
  • 1 cup julienned carrots
  • 1 clove garlic, minced
  • 1 small head cabbage, sliced
  • 0.5 cup fresh shredded coconut
  • 2 tablespoons Indian curry powder
  • 0.75 cup coconut milk
  • salt and pepper to taste
  • 0.25 cup diced fresh tomato
  • 0.25 cup chopped green onions
  • 0.25 cup chopped cilantro
Instructions:
  • Heat oil and butter until smoking in a large skillet or wok over high heat. Add onion, carrot, and garlic; cook and stir until onion begins to soften, about 1 minute. Stir in cabbage, coconut, and curry powder; stir fry for an additional 2 minutes.
  • Lower the heat to medium-low, then add the coconut milk and season with salt and pepper according to your preference. Cover and cook until done to your liking. Serve by sprinkling with tomatoes, green onions, and cilantro.
