Curry's perfect match: Spiced cabbage side dish.
Ingredients:
  • 36.80 gm vegetable oil
  • 3 garlic cloves, thinly sliced
  • 1 long fresh green chilli, thinly sliced
  • 3cm-piece fresh ginger, peeled
  • 2 tsp ground turmeric
  • 2 tsp mustard seeds
  • 1/4 (about 400g) white cabbage, coarsely chopped
  • 20g (1/4 cup) desiccated coconut
Instructions:
  • Start by heating a wok over medium-high heat until it is nice and hot. Carefully pour in the oil and heat it until it starts to smoke slightly. Toss in the garlic, chili, and ginger, then stir-fry for 1-2 minutes until fragrant. Next, add the turmeric and mustard seeds and continue to cook, stirring continuously, until the mustard seeds begin to pop.
  • Toss in the cabbage and coconut and cook for 4 minutes until the cabbage is tender crisp. Serve hot.
