Delicious and light, this sweet fruit and fresh veggie dish is ideal for a summer day or evening.
Ingredients:
  • 18.20 gm olive oil
  • 4 (about 220g each) skinless salmon fillets
  • 2 ripe mangoes, cheeks removed, peeled, finely chopped
  • 1 long fresh red chilli, halved, deseeded, thinly sliced
  • 40.00 ml chopped fresh coriander
  • 21.00 gm fresh lime juice
  • 1 bunch asparagus, woody ends trimmed
  • Lime wedges, to serve
Instructions:
  • Heat oil in a non-stick pan over medium-high heat. Season salmon with salt and pepper, then cook for 3-4 minutes on each side, or until cooked through.
  • Combine the ripe mango, spicy chili, fresh coriander, and tangy lime juice in a bowl. Taste and adjust the seasoning with a sprinkle of salt and a crack of black pepper to your liking.
  • Blanch the asparagus in boiling water until vibrant green and crisp-tender, about 2-3 minutes.
  • Plate the salmon individually and garnish with asparagus and salsa before serving alongside lime wedges.
