Chilli lime, prawn and mango salad

Elevate summer with vibrant Australian prawn salad.
Ingredients:
  • 16.00 gm brown sugar
  • 36.80 gm canola oil
  • 44.00 gm sweet chilli sauce
  • 750g green prawns, peeled, tails intact
  • 1 lime, juiced
  • 2 honey gold mangoes, peeled, sliced
  • 2 Lebanese cucumbers, sliced
  • 150g baby spinach leaves
  • 62.50 ml fresh coriander leaves
Instructions:
  • Mix together 1 tablespoon of brown sugar, 2 tablespoons of canola oil, and 2 tablespoons of sweet chilli sauce. Toss in 750g of peeled green prawns with tails intact until coated evenly. Refrigerate for 30 minutes.
  • Preheat a chargrill pan over medium heat. Grill the prawns for 2-3 minutes. In a saucepan, bring the marinade to a boil, then remove from heat and stir in the juice of 1 lime.
  • Mix together 2 peeled and sliced honey gold mangoes, 2 sliced Lebanese cucumbers, 150g baby spinach leaves, 1/4 cup fresh coriander leaves, prawns, and dressing.
