Cajun prawns with mango, lime and coconut salsa

Impress guests with zesty royal prawn appetizers.
Ingredients:
  • 24 large green king prawns
  • 18.20 gm extra virgin olive oil
  • 10.00 gm Cajun seasoning
  • 1 large mango, finely chopped
  • 21.45 gm shredded coconut, toasted
  • 1 long red chilli, seeded, finely chopped
  • 62.50 ml fresh coriander leaves, finely chopped
  • 2 tsp lime rind, finely grated
  • 21.00 gm lime juice
  • Lime wedges, to serve
  • Fresh coriander leaves, extra, to serve
Instructions:
  • Peel prawns, keeping heads and tails on. Combine prawns with oil and seasoning in a large bowl, tossing to coat evenly. Skewer 3 prawns per double skewer, alternating between tail and head. Place prepared skewers on a plate and continue until you have 8 double skewers in total.
  • Preheat a barbecue chargrill to a sizzling medium-high heat. Grill skewers for a couple of minutes on each side until prawns turn pink and are perfectly cooked.
  • Mix mango, coconut, chili, coriander, lime zest, and lime juice in a bowl. Serve the prawns with the salsa, lime wedges, and extra coriander.
