Quick and zesty Cajun prawn tostadas with fresh lime, creamy avocado, and a spicy kick! Ready in 20 minutes, perfect for snacking or a light meal.
Ingredients:
  • 1 small avocado, chopped
  • 21.00 gm fresh lime juice
  • 12 blue tortilla chips
  • 30.00 ml black beans, rinsed, drained
  • 20.00 ml finely chopped red onion
  • 12 green prawns, peeled, tails intact
  • 20.00 ml Cajun spice mix
  • Fresh coriander leaves, to serve
  • Lime wedges, to serve
Instructions:
  • Mash the avocado with a fork until slightly chunky. Stir in the lime juice and season to taste.
  • Lay out the tortilla chips on a platter and generously top them with a flavorful mixture of avocado, beans, and onion.
  • Combine prawns and spice mix in a bowl, toss well. Heat a large non-stick frying pan over medium-high heat, spray with oil, and cook prawns for 1 minute on each side until done.
  • Arrange the prawns over the corn chips, sprinkle with fresh coriander, and garnish with lime wedges for serving.
