Grilled Cajun prawns

Exciting and efficient cooking in just 15 minutes, perfect for busy days.
Ingredients:
  • 800 g sweet potatoes
  • 40 g Cheddar cheese
  • 16 large raw, shell-on Australian green banana prawns from sustainable sources
  • 3 cloves of garlic
  • 1 heaped tablespoon Cajun seasoning
  • ½ bunch of fresh thyme (15g)
  • 1 lemon
  • 1 green capsicum
  • 1 red capsicum
  • 2 sticks of celery
  • 5 spring onions
  • ½ fresh red chilli
  • 1 big handful of frozen sweetcorn
  • 1 teaspoon sweet smoked paprika
Instructions:
  • Prep Ingredients: Wash and slice the sweet potatoes using a food processor. Place the sliced sweet potatoes into a large lidded pan with salt and cover with boiling water. Prepare Prawns: Put prawns in a roasting tray, crush over unpeeled garlic, add Cajun seasoning, oil, and thyme. Sear briefly on high heat, then grill until golden and crispy. Cook Vegetables: In a large frying pan, sauté peppers, celery, spring onions, chilli, sweetcorn, and paprika with oil. Season to taste and stir continuously. Finish Dish: Drain and mash the sweet potatoes, then mix in grated cheese. Top the mash with sautéed vegetables and serve with crispy prawns and lemon wedges.
