Chargrilled eggplant and tomato salad recipe

Grilled Cajun-spiced eggplant with mixed tomatoes - a vibrant and flavorful summer side dish.
Ingredients:
  • 2 eggplants, thickly sliced lengthways
  • 5.00 gm Cajun seasoning
  • 350g mixed medley tomatoes, halved
  • 62.50 ml flat-leaf parsley leaves
  • 18.20 gm extra virgin olive oil
Instructions:
  • Preheat a barbecue grill or chargrill to high heat. Coat eggplant slices with olive oil spray and generously season both sides with Cajun seasoning. Grill the eggplant in 2 batches for 2-3 minutes per side, or until they are tender.
  • Place the eggplant slices elegantly on a platter. Add a layer of fresh tomatoes and sprinkle with parsley. Drizzle generously with flavorful olive oil and season to perfection.
