Whip up a delicious vegetable focaccia for a quick and stylish lunch!
Ingredients:
  • 1 x 300g focaccia bread, halved, split
  • 62.50 ml black olive tapenade
  • 180g eggplant
  • 190g jar chargrilled zucchini in oil, drained
  • 110g semi-dried tomato
  • 60g provolone cheese, thinly sliced
Instructions:
  • Preheat the sandwich press until hot. Spread the cut sides of the focaccia with flavorful tapenade. Layer the bases with delicious eggplant, zucchini, tomatoes, and provolone. Finish with a sprinkle of freshly cracked pepper.
  • Top focaccia with sandwich filling and press in sandwich press until golden and warmed through. Serve hot.
