Simple and flavorful Italian salad with only 6 ingredients.
Ingredients:
  • 330g (18 slices) marinated chargrilled eggplant
  • 150g marinated mixed chargrilled capsicum, torn into strips
  • 120g semi-dried tomatoes
  • 180g ctn Persian Fetta
  • 40.00 ml balsamic glaze
  • 70g baby rocket leaves
Instructions:
  • Place the eggplant, capsicum, and tomato elegantly on a large serving platter.
  • Gently drain the feta, saving the flavorful oil. Whisk together the reserved oil and balsamic glaze in a bowl. Drizzle the mixture over the vegetables, setting aside a tablespoon of dressing. Crumble the feta and sprinkle generously over the vegetables.
  • Mix together the saved dressing and arugula in a bowl, then place the arugula mixture on top of the vegetables.
