Delicious picnic pasta salad with zesty dressing, broccoli, pepperoni, tomatoes, and mozzarella.
Ingredients:
  • 0.5 cup vegetable oil
  • 3 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • 1 teaspoon dried basil
  • 0.125 teaspoon crushed red pepper flakes
  • 1 teaspoon salt
  • 6 ounces macaroni
  • 2 cups broccoli florets
  • 4 ounces sliced pepperoni sausage
  • 10 cherry tomatoes, halved
  • 0.5 cup shredded mozzarella cheese
Instructions:
  • Boil pasta in salted water until perfectly cooked, then drain.
  • Combine oil, vinegar, garlic, basil, salt, and pepper in a large bowl. Mix in warm macaroni until well coated. Add Parmesan, cover, and chill in the fridge for 2 to 3 hours.
  • Combine the broccoli, pepperoni, and tomatoes, tossing until well mixed. Top with a generous sprinkle of mozzarella cheese before serving.
