The ultimate fruit salad

Enhance dishes with pineapple mint in desserts, antipasto, marinating, or with lamb. For a refreshing summer treat, chop and sprinkle over ripe melon.
Ingredients:
  • 100 g caster sugar
  • ½ teacup water
  • 1 bunch of fresh pineapple mint finely chopped, optional
  • 1 kg mixed fruit, such as melon, pineapple, green seedless grapes, lychees, Granny Smith apples, strawberries, blueberries, cherries
Instructions:
  • In a saucepan, combine sugar and a teacup of water and heat until sugar dissolves. For extra flavor, infuse the hot syrup with half a bunch of whole pineapple mint stems until cool. Remove the stems, add the peeled and chopped fruit, and refrigerate. Before serving, mix in half a bunch of picked pineapple mint leaves.
