Muesli and fruit slices: the ultimate lunchbox favorite!
Ingredients:
  • 125.00 ml finely chopped dried apple
  • 85.00 gm sultanas
  • 125.00 ml dried cranberries
  • 75.00 gm self-raising flour
  • 75.00 gm wholemeal self-raising flour
  • 45.00 gm brown sugar
  • 250.00 ml nut-free untoasted muesli (see tip)
  • 250.00 ml reduced-fat plain Greek-style yoghurt
  • 2 eggs, lightly beaten
  • 56.88 gm olive oil
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced. Grease a 20cm x 30cm lamington pan, then line it with baking paper, leaving a 2cm overhang on the long ends.
  • In a bowl, combine apples, sultanas, cranberries, flours, sugar, and 2/3 cup of muesli. Mix well. In a separate jug, whisk together yogurt, egg, and oil. Gently fold the yogurt mixture into the muesli mixture until just combined. Transfer the mixture into the prepared pan and top with the remaining muesli.
  • Bake for 20 minutes until a skewer inserted in the center comes out clean. Let it rest in the pan for 5 minutes, then transfer to a wire rack to cool. Cut into rectangles and serve.
